The Riserva del Mare fior di sale is traditionally collected by salt workers, using special nets in the early hours of the morning in the absence of wind, to prevent it from falling to the bottom of the tank.
It is only 3 millimetres thick. Therefore, during the harvest held in July, the production is very limited.
It is naturally dried to keep its properties unaltered, such as: iodine, magnesium and other trace elements essential for the human body.
It does not contain any additives and does not undergo any chemical treatment.
The fior di sale is considered to be a very rare precious commodity, it has a delicate flavour that does not leave a bitter aftertaste, and therefore it is mainly used in gourmet kitchens.
It is also recommended for the preparation of desserts, moreover in our production we have created variants with organic Sicilian aromatic herbs and citrus fruits.
These are available in lemon, orange, oregano, black olives, chilli, rosemary, thyme and four peppers.
